- 1 cup (250 mL) mayonnaise
- ½ cup (125 mL) smoky barbecue sauce
- 2 tbsp (30 mL) minced garlic
- 3 oz (90 g) chopped pickled jalapeño, about ½ cup (125 mL)
Service
- 16 Ground Beef Patties, about 6 oz (175 g) each
- 16 slices smoked Cheddar cheese, about 1 lb (500 g)
- 16 leafy green lettuce leaves
- 16 brioche burger buns, split and lightly toasted
- 16 thin slices tomato
- 16 slices hickory smoked bacon, cooked crisp and halved, about 6 oz (175 g)
- 64 slices pickled jalapeño
- 4 oz (125 g) finely chopped red onion, about 1 cup (250 mL)
- 32 deep-fried onion rings, about 2 lb (1 kg)
Preparation
- Smoky Burger Sauce: Whisk mayonnaise with barbecue sauce and garlic until well combined. Stir in pickled jalapeño. Cover and refrigerate.
Service
- Grill burger or sear on flat top, turning as needed until a digital instant-read thermometer inserted sideways into centre of burger reads at least 160°F (71°C). Top with 1 slice Cheddar cheese; cook until melted.
- Arrange a lettuce leaf on bottom burger bun. Top with cooked burger, 1 slice EACH tomato and bacon, 4 jalapeño rings and 1 tbsp (15 mL) red onion.
- Garnish with onion rings. Drizzle with 2 tbsp (30 mL) Smoky Burger Sauce. Cap with top bun.
Chef's Tip
Housemade burgers can be made using medium ground beef, source ground chuck or round. Alternately, swap onion rings with crispy fried onion straws.
Upgrade burger by increasing patty size to 8 oz (250 g).
