Baked Beef Meatball Skewers with Asian-Style Slaw

Kids love ground beef, especially when served brochette-style with plum sauce for dipping and some crunchy slaw on the side.

Ingredients

1 lb (500 g) Lean Ground Beef Meatballs, about sixteen 1-inch (2.5 cm), uncooked 4 skewers, soaked if bamboo ¼ cup (60 mL) EACH rice vinegar and granulated sugar 2 tbsp (30 mL) vegetable oil 1½ tsp (7 mL) Dijon mustard 1 tsp (5 mL) sesame oil ½ bag (16 oz/454 g) coleslaw mix 1 green onion, sliced ½ cup (125 mL) snow or snap peas, halved lengthwise ½ cup (125 mL) drained canned sliced water chestnuts (about half a 8 oz/227 mL can) Roasted shelled peanuts (optional) Plum sauce

1. Thread 4 meatballs onto each skewer. Arrange on lightly oiled parchment paper- or foil-lined rimmed baking sheet, spacing them apart. 2. Bake in a preheated 400°F oven for 10 to 15 minutes, until a digital instant-read thermometer inserted into centre of several meatballs reads 160°F (71°C). 3. Meanwhile, whisk together vinegar, sugar, vegetable oil, Dijon mustard and sesame oil in a large bowl. Add coleslaw mix, green onion, snow peas and water chestnuts; toss to combine. 4. Spoon slaw onto plates, sprinkle with peanuts, if desired. Arrange skewers on top of slaw and serve with plum sauce for dipping.

Tip

The Slaw can be made up to a day in advance; refrigerate in an airtight container
