Grilled Marinated Beef Sandwich with Melted Onions

This flavourful sandwich is a twist on the traditional hot beef sandwich! Serve with a bun top as a hand-held meal or open-faced for knife-and-fork dining. Take advantage of garden-fresh baby greens for a pop of brightness and a enjoy with a light beer or flavoured water for a bistro-style dinner or lunch.

Ingredients

3 tbsp (45 mL) olive oil, divided 2 tbsp (30 mL) red wine vinegar 4 cloves garlic, minced ½ tsp (2 mL) hot pepper flakes Salt 1 lb (500 g) Beef Bottom Sirloin Tri-tip Grilling Steak, ¾ inch (2 cm) thick (about 4 small steaks) Fresh ground pepper 1 sweet onion (such as Vidalia), sliced 1 whole wheat or regular baguette, quartered and halved lengthwise Olive oil or softened butter 2 cups (500 mL) baby arugula

1. Combine 2 tbsp (30 mL) oil, vinegar, garlic, hot pepper flakes and ½ tsp (2 mL) salt in sealable freezer bag. Transfer 2 tbsp (30 mL) of marinade to a small bowl; set aside. Pierce meat all over with a fork; add to marinade in bag, turning to coat. Seal and refrigerate for 1 hour. 2. Remove steaks from marinade; discard marinade. Pat steaks dry with paper towel; season all over with salt and pepper. Grill steaks in a closed preheated barbecue over medium-high heat (400°F/200°C) for 6 to 8 minutes for ¾ inch (2 cm) thick steaks, turning twice or more, for medium-rare 145°F (63°C) at the least. Grill baguette pieces, cut side down, over medium heat for 1 to 2 minutes or until warmed, if desired. Transfer steaks to cutting board, cover with foil and let rest for 10 minutes. Brush oil over grilled sides of baguettes. 3. Meanwhile, heat remaining 1 tbsp (15 mL) oil over medium heat in nonstick skillet; cook onion, stirring often, for 10 minutes or until softened and golden. Remove from heat and toss with reserved marinade. 4. Slice steaks thinly on the diagonal. Drape slices of steak on each baguette bottom piece. Top each with warm onions and arugula and top of baguette.

Tip

Use a digital instant-read thermometer inserted sideways into the steak for the best way to determine doneness.
