Easy Italian Wedding Soup

Quick and easy, this simple soup is super tasty and satisfying. Pastina or “tiny pasta” can be found shaped in rounds, stars or alphabets, but you can also use orzo, tubetti or mini shells.

Ingredients

8 cups (2 L) reduced-sodium chicken broth 2 carrots, thinly sliced ¾ cup (175 mL) grated Parmesan cheese, divided (approx) ⅓ cup (75 mL) seasoned dry bread crumbs 1 tsp (5 mL) dried Italian herb seasoning ½ tsp (2 mL) EACH salt and fresh ground pepper 1 clove garlic, minced 3 eggs, divided ¾ lb (375 g) Extra Lean Ground Beef ¾ cup (175 mL) dry pastina pasta 1 pkg (142 g) baby spinach (about 6 cups/1.5 L) 1 tbsp (15 mL) fresh lemon juice

1. Combine broth and carrots to a boil in a large saucepan; bring to a boil over medium-high heat. Reduce heat and simmer for about 5 minutes or until carrots are just softened. 2. Meanwhile, combine ¼ cup (60 mL) Parmesan, bread crumbs, Italian seasoning, salt, pepper, garlic and 1 egg in a large bowl. Gently mix in ground beef with a fork (careful not to over-mix). 3. Using a melon baller, cookie scoop or small spoon, portion and loosely shape meat into about 48 meatballs and place onto a baking sheet. 4. Carefully drop meatballs all at once into broth; return to a simmer. Stir in pastina. Simmer for 5 to 8 minutes or until meatballs are cooked through and pastina is tender. Add spinach and cook for 2 minutes or until wilted. Whisk remaining eggs with remaining ½ cup (125 mL) Parmesan in a bowl; gradually pour into simmering soup while stirring constantly. 5. Remove pan from heat. Stir in lemon juice. Portion into serving bowls and top each serving with a sprinkle of additional Parmesan, if desired.

Tip

Substitute spinach with shredded escarole, kale, Swiss chard or dandelion greens.
