Speedy One-Pot Ground Beef Rotini

Perfect for busy weeknights, this one-pan wonder pasta gets finished with shredded Italian cheese for a saucy and ooey, gooey dish that the whole family will love. Rotini pasta is used in this recipe, but you can substitute with your favourite short-cut pasta, such as fusilli, penne or medium shells.

Ingredients

2 tbsp (30 mL) olive oil 1 lb (500 g) Lean Ground Beef 1 onion, finely chopped 2 cloves garlic, minced 1 tbsp (15 mL) dried Italian herb Seasoning 1 tsp (5 mL) EACH salt and fresh ground pepper 2 cups (500 mL) EACH tomato sauce and reduced-sodium chicken broth 12 oz (375 g) dry rotini pasta 2 cups (500 mL) shredded Italian cheese blend or mozzarella

1. Heat olive oil over medium-high heat in a large sauté pan or deep skillet. Cook beef, onion, garlic, Italian seasoning, salt and pepper, stirring often and using back of spoon to break up meat into small chunks, for 8 to 10 minutes or until beef is browned. 2. Add tomato sauce, broth, rotini and 1 cup (250 mL) water, stirring to submerge pasta in liquid; bring to a boil. Cover and reduce heat to medium-low. Simmer, stirring occasionally, for 12 to 15 minutes or until pasta is tender and has absorbed most of the liquid. Reduce heat to low. 3. Stir in half the cheese; sprinkle remaining cheese over top. Cover, remove from heat and let stand for 2 to 3 minutes or until cheese has melted.

Tip

Stir in 2 cups (500 mL) baby spinach or kale before adding cheese, if desired.
