This unpretentious sumptuous dish, is often called Fire Engine as the vibrant colours are reminiscent of those of a fire truck. The dish is traditionally made with canned corned beef in the islands, but in this case, my recipe takes fresh corned beef brisket instead, taking it to the next level! The corned beef is cooked, shredded coarsely and sautéed with herbs, spices, and tomatoes for brightness. Traditionally this dish is served with steamed white rice and slices of ripe avocado. As a kid it was one of my favourite breakfast (when paired with white corn grits), as well as a quick weeknight dinner.
