Move hamburgers indoors for this pub dinner special. Simple pan-fried beef patties simmer to juiciness in a savoury mushroom sauce with a splash of wine. Serve with mashed potatoes and green peas, of course!

Ingredients

1 egg ¼ cup (60 mL) finely chopped onion 2 tbsp (30 mL) dry bread crumbs ¼ tsp (1 mL) EACH salt and pepper 1 tsp (5 mL) Worcestershire sauce 1 lb (500 g) Lean Ground Beef 1 tbsp (15 mL) canola or sunflower oil

Mushroom Wine Sauce

½ cup (125 mL) finely chopped onion 2 cups (500 mL) thinly sliced mushrooms 3 cloves garlic, minced ¼ tsp (1 mL) dried thyme leaves Salt and pepper 2 tbsp (30 mL) all-purpose flour ¼ cup (60 mL) dry red wine 2 cups (500 mL) no-salt-added beef broth 2 tsp (2 mL) Worcestershire sauce (approx) Chopped fresh parsley

1. Combine egg, onion, bread crumbs, salt and pepper with a fork in a large bowl. Gently mix in ground beef with a fork (careful not to over-mix). Form into four patties, about ¾ inch (2 cm) thick. Press a dimple into the centre of each patty. 2. Heat oil over medium-high heat in a large nonstick skillet. Pan-fry patties for about 6 minutes, turning once, or until well browned on both sides. Transfer to a clean plate with slotted spatula, leaving fat in skillet; set patties aside. 3. Mushroom Wine Sauce: Return skillet to medium heat. Add onion; cook, stirring, for about 2 minutes or until softened. Add mushrooms; cook, stirring often, for about 5 minutes or until they release their liquid and start to brown. Add garlic, thyme and a ⅛ tsp (0.5 mL) each of salt and pepper; cook, stirring for 1 minute. Sprinkle with flour; cook, stirring, for 1 minute. Gradually whisk in wine, then broth and 2 tsp (10 mL) Worcestershire sauce; bring to a boil, stirring often. 4. Return patties and accumulated juices to skillet; spoon sauce over patties. Reduce heat and simmer for about 12 minutes, turning patties once, until sauce is thickened and a digital instant-read thermometer inserted sideways into patties reads 160ºF (71ºC). 5. Place patties on serving plates. Season sauce Mushroom Wine Sauce with Worcestershire sauce or salt and pepper to taste and spoon over patties. Sprinkle with parsley.
