Glazed Meat Loaf with Roasted Veggies

This old-fashioned meat loaf with a tangy ketchup glaze is tasty, moist and juicy. Spice up the glaze with a little sriracha for a modern twist.

Ingredients

Meat Loaf

1 cup (250 mL) seasoned dry bread crumbs 3 eggs, beaten 1 onion, grated ¼ cup (60 mL) finely chopped fresh parsley 2 tbsp (30 mL) EACH Dijon mustard and Worcestershire sauce 1 tsp (5 mL) EACH salt and fresh ground pepper 1½ lb (750 g) Lean Ground Beef

Glaze

⅓ cup (75 mL) ketchup 2 tbsp (30 mL) packed brown sugar 1 tbsp (15 mL) cider vinegar Roasted Veggies 2 lb (1 kg) red skinned potatoes, cut into 1-inch (2.5 cm) chunks 4 large carrots, peeled and cut into 1-inch (2.5 cm) chunks 2 tbsp (30 mL) vegetable oil 1 tbsp (15 mL) dried fine herbes or Italian herb seasoning ¾ tsp (4 mL) EACH salt and fresh ground pepper 1 cup (250 mL) frozen peas

1. Combine bread crumbs, eggs, onion, parsley, mustard, Worcestershire sauce, salt and pepper in a large bowl. Gently mix in ground beef with a fork (careful not to over-mix). Form ground beef mixture into a loaf shape (about 9 inches/23 long by 5 inches/12 cm wide) on a parchment paper-lined rimmed baking sheet; set aside. 2. Glaze: Combine ketchup, sugar and vinegar in a small bowl; set aside. 3. Combine potatoes, carrots, oil, herbs, salt and pepper in a large bowl; toss to coat. Arrange in an even layer on another parchment paper-lined rimmed baking sheet. 4. Bake vegetables on the bottom rack and meat loaf on the middle rack in preheated 400°F oven, tossing vegetables occasionally, for 40 minutes. Brush meat loaf with reserved glaze. Bake for 20 minutes, scattering peas over vegetables in the last 5 minutes of baking. Meat loaf is done when a digital instant-read thermometer inserted into the centre of the loaf reads 160°F (71°C). Tent meat loaf with foil and let stand for 10 minutes. (Return potatoes and carrots to oven while meat loaf rests, if needed.) 5. Cut meat loaf into slices and serve with Roasted Veggies.

Tip

Add 1 tbsp (15 mL) Asian chili sauce, such as sambal oelek or sriracha, to the glaze for a sweet and spicy topping.
