A classic Reuben sandwich is a restaurant favourite that can be easily made at home. If the ingredients are doubled up, these sandwiches are perfect to feed a crowd for a casual weekend get-together.

Ingredients

2 tbsp (30 mL) butter, softened 8 slices light rye bread ½ cup (125 mL) Thousand Island dressing 8 thin slices cooked Corned Beef Brisket 1 cup (250 mL) well-drained sauerkraut 4 slices Swiss cheese Dill pickles (optional)

1. Heat a large skillet over medium heat. 2. Lightly butter one side of each bread slice. Spread non-buttered sides with Thousand Island dressing. On 4 of the bread slices, layer 2 slices of corned beef, one-quarter of the sauerkraut and 1 slice of Swiss cheese. Sandwich with remaining bread slices with buttered sides out. 3. Cook, in batches as necessary, for about 4 minutes or until bottom is crisp and golden brown. Flip and cook the other side for about 3 minutes or until golden brown, the cheese is melted and sandwich is warmed through. Serve hot with pickles, if desired.
