Sassy Marinated Grilled Steak with Spicy Coleslaw

Eye of Round steaks are perfect cooked on the grill for a relaxed summer dinner. Marinate the steaks in the morning and prepare the coleslaw a few hours ahead to make meal prep easy. A touch of Sriracha adds just a hint of heat.

Ingredients

1/2 cup (125 mL) barbecue sauce 2 tbsp (30 mL) cider vinegar 1 tbsp (15 mL) vegetable oil 1 tbsp (15 mL) Sriracha 2 cloves garlic, minced 8 small Beef Eye of Round Marinating Steaks, ¾ inch (2 cm) thick (about 2 lb/1 kg)

1. Combine barbecue sauce, vinegar, oil, Sriracha and garlic in a sealable freezer bag. Pierce steaks all over with fork and add to bag, turning to coat; seal and refrigerate for 8 to 12 hours. 2. Coleslaw: Meanwhile, whisk together mayonnaise, lemon juice, Sriracha, sugar, salt and pepper in a large bowl; add coleslaw mix and toss to combine. Cover and refrigerate until ready to serve, for up to 4 hours. 3. Discard marinade from meat; pat steaks dry with paper towel. 4. Grill in a closed preheated barbecue over medium-high (400°F/200°C) for 6 to 8 minutes for ¾ inch (2 cm) thick steaks, turning twice or more and brushing with some of the sauce, or until a digital instant-read thermometer inserted sideways into centre of steak reads 145°F (63°C) for medium-rare doneness at the least. 5. Let rest for 5 minutes. Serve steaks with coleslaw as a side dish.

Tip

Use a digital read instant thermometer inserted sideways for best judgement of doneness.
