Pan-Seared Brazilian-Style Steak with Sizzling Garlic Butter

So simple and yet so flavourful, this recipe is sure to become a fan-favourite! Loads of garlic cooked in butter until golden, with a finish of fresh parsley and lime – and there you go! Perfect companions for the bold, beefy goodness.

Ingredients

1 Beef Outside Skirt Marinating Steak (about 1½ lb/750 g) 1 tsp (5 mL) EACH salt and fresh ground pepper 1 tbsp (15 mL) vegetable oil 6 cloves garlic, minced ⅓ cup (75 mL) salted butter ¼ cup (60 mL) chopped fresh parsley, divided Lime or lemon wedges

1. Portion steak into 4-inch (10 cm) wide pieces. Season all over with salt and pepper; brush with oil. 2. Heat a grill pan over medium-high heat until very hot. Cook steaks, in batches, for 6 to 8 minutes for ¾ inch (2 cm) thick steaks, turning twice or more, or until a digital instant-read thermometer inserted sideways into centre of steak reads 145°F (63°C) for medium-rare at the least. Transfer to a cutting board and let rest for 5 minutes. 3. Meanwhile, melt butter over low heat in a small skillet. Cook garlic, swirling often, for 3 to 5 minutes or until golden and fragrant. Remove from heat. Stir in half the parsley and a squeeze of lime. 4. Slice steaks thinly across the grain. Spoon garlic butter over steak. Sprinkle with remaining parsley. Serve with lime wedges.

Grilling method: Grill in a closed preheated barbecue over medium-high heat (400°F/200°C) for 6 to 8 minutes for ¾ inch (2 cm) thick steaks, turning twice or more, or until a digital instant-read thermometer inserted sideways into centre of steak reads 145°F (63°C) for medium-rare at the least.
