Big Batch Baked Mini Mexican-Style Meat Loaves

This mini meat loaf recipe makes many so be sure to wrap some up to tuck into the freezer for future quick meals. As they reheat quickly in the microwave, these are also good to have on hand in the fridge for staggered meals when someone misses dinner-time. See Tip (below) for storage info.

Ingredients

Nonstick cooking spray 4 eggs 1½ cups (375 mL) dry bread crumbs 1 cup (250 mL) salsa 2 tbsp (30 mL) chili powder 2 tsp (10 mL) EACH dried oregano leaves and onion powder ½ tsp (2 mL) salt 3 lb (1.5 kg) Lean Ground Beef 1 can (19 oz/540 mL) black beans, drained and rinsed Sour cream, salsa, shredded cheese

1. Spray two 12-cup muffin pans with nonstick cooking spray. Set aside. 2. Combine eggs, bread crumbs, salsa, chili powder, oregano, onion powder and salt in a large bowl with a fork until everything is well combined. Gently mix ground beef and black beans with a fork (careful not to over-mix). 3. Form the mixture into 24 equal meatballs then place each into 1 cup of prepared muffin pans. Firmly press the meatballs down with damp hands so they are flat on top. 4. Bake in a preheated 400˚F oven for 20 minutes or until a digital instant-read thermometer inserted in the centre of several meat loaves reads 160˚F (71˚C). 5. Let cool in pans for 5 minutes. Loosen the meat loaves from the pans with a knife, remove gently and serve topped with sour cream, salsa and cheese.

Tip

Store extra meat loaves in an airtight container in the fridge for up to 3 days or wrap each individually and freeze in an airtight container for up to 3 months. To reheat from frozen: place in a 350˚F oven and cook for 10 to12 minutes or until hot throughout or microwave for 3 to 4 minutes on HIGH until hot throughout.
