Grilled Marinated Steak with Spinach Salad and Candied Pecans

This steakhouse-style lunch/dinner is not so complicated to make if you do the tasks in stages: marinade, candied pecans, steak! Pre-washed baby spinach is a real time-saver.

Ingredients

1 cup (250 mL) raspberry or balsamic vinaigrette dressing, divided 1 lb (500 g) Beef Outside Round Marinating Steak, 1 inch (2.5 cm) thick ¼ cup (60 mL) granulated sugar ½ cup (125 mL) broken pecan halves Steak spice 5 oz (142 g) container baby spinach 4 oz (125 g) Roquefort or other blue cheese, crumbled Fresh ground pepper

1. Pour ½ cup (125 mL) of the dressing in resealable freezer bag. Pierce steak all over with fork and add to bag, turning to coat; seal and refrigerate for 8 to 12 hours. 2. Meanwhile, heat sugar with pecans in heavy skillet over high heat for 2 minutes, stirring constantly, until sugar is melted, golden and syrupy and pecans are coated. Immediately remove pan from heat and use 2 forks to scoop out pecans onto parchment paper to cool. 3. Discard marinade from meat; pat steak dry with paper towel. Season all over with steak spice to your taste. Grill in a closed preheated barbecue, or pan-fry or broil using medium-high heat for 10 to 12 minutes for 1 inch (2.5 cm) thick steaks, turning twice or more, or until a digital instant-read thermometer inserted sideways into centre of steak reads for medium-rare 145°F (63°C) at the least. 4. Transfer to a cutting board and let rest for 5 minutes. Meanwhile, toss spinach with remaining vinaigrette dressing and divide among serving plates. Carve steak across the grain into thin slices; place on spinach. Top with crumbled cheese and pecans. Sprinkle with pepper to taste.

Tip

For best browning and flavour, pat steaks dry with paper towels before grilling.
