Moroccan Ground Beef Stir-Fry

This Moroccan-inspired recipe features spices you probably already have in your cupboard that will turn ground beef into an interesting supper dish with exotic North African flavours. Serve over steaming hot couscous to soak up the sauce.

  • 1 lb (500 g) Extra Lean Ground Beef
  • 1 onion, chopped
  • 1 EACH carrot and sweet red pepper, cut into matchstick pieces
  • 2 cloves garlic, minced
  • 1 tbsp (15 mL) paprika
  • 1 tsp (5 mL) EACH ground ginger, cumin and cinnamon
  • ¼ tsp (1 mL) EACH hot pepper flakes, salt and pepper
  • 1 can (28 oz/796 mL) diced tomatoes, with juice
  • ¾ cup (175 mL) sliced green olives
  • Toasted pine nuts or slivered almonds
  • Chopped fresh cilantro

Method

Follow these cooking methods/directions:

  1. Cook ground beef, onion, carrots and sweet pepper over medium-high heat in large skillet, breaking beef up into small chunks with back of spoon, for 8 to 10 minutes, or until beef is completely cooked and vegetables are tender-crisp. Drain if necessary.

  2. Stir in garlic, paprika, ginger, cumin, cinnamon, hot pepper flakes, salt and pepper; cook, stirring, for 1 minute. Stir in tomatoes with juice; bring to boil. Reduce heat to low; simmer, covered, for 5 to 10 minutes or until vegetables are tender.

  3. Stir in olives; heat through. Garnish with pine nuts and cilantro to serve.
