Warm, satisfying and delicious, this hot roast beef sandwich is a menu mainstay. Preparing roast beef in-house gives chefs more control over cut, cost and flavour. Round Roasts are easy to handle, have a consistent grain and lean marbling so it’s easy to carve thinly. This sandwich is topped with a warmed queso sauce and crispy jalapeños for a little kick of heat.
Ingredients
Here are the following ingredients:
Roast Beef
- ¼ cup (60 mL) olive oil
- 2 tsp (10 mL) dried rosemary leaves
- 2 tsp (10 mL) dried thyme leaves
- 2 tsp (10 mL) kosher salt
- 1½ tsp (7 mL) dehydrated minced garlic
- 1½ tsp (7 mL) onion powder
- 1½ tsp (7 mL) freshly ground black pepper
- 1 tsp (5 mL) paprika
- 2 Round Roasts, about 3 lb (1.5 kg) each
Service
- 16 large kaisers, split
- 2 cups (500 mL) queso or nacho cheese sauce, warmed
- 4 oz (125 g) diced white or red onion, about 1 cup (250 mL)
- 2 oz (60 g) crispy fried jalapeños, about 1 cup (250 mL)
Preparation
- Roast beef: Mix olive oil with rosemary, thyme, salt, minced garlic, onion powder, pepper and paprika to make a thick, spreadable paste. Rub all over roasts, leaving the ends naked.
- Place roasts, fat side up, in a shallow roasting pan fitted with a rack. Cook, in conventional oven at 450°F (230°C), for 15 minutes or until evenly browned.
- Reduce oven temperature to 300°F (150°C) and roast, uncovered, to desired doneness, removing from oven when 5°F (3°C) below desired finished temperature (145°F/63°C for medium-rare, or 160°F/71°C for medium, or 170°F/77°C for well-done).
- Rest for at least 40 minutes before thinly slicing or cool, cover and refrigerate. If refrigerating, slice before service.
Service
- Warm 4 oz (125 g) thinly sliced roast beef on flat top or in skillet.
- Arrange warmed roast beef on bottom bun. Top with 2 tbsp (30 mL) queso, 1 tbsp (15 mL) EACH diced onion and fried jalapeños. Cap with top bun.
Chef's Tip
Refrigerating the roast until chilled through makes it easier to achieve thin, tender slices of beef for sandwich. Alternatively, use prepared roast beef for an efficient and cost-effective alternative.
Use the same roast beef to prepare a hot roast beef sandwich smothered in beef gravy. Serve sandwich with side of french fries or salad, and drink as a combo. Substitute crispy fried jalapeños with pickled jalapeños.
