Ground Beef Skewers with Golden Grilled Vegetables

This is a great casual summer entertaining dish that goes beyond burgers and buns. Set out the grilled meat, vegetables and pitas on platters and let family and friends have the fun of assembling their own dinners. Place meat and vegetables into pita pockets to eat.

Ingredients

Here are the following ingredients:

  • ¼ cup (60 mL) packed coarsely chopped fresh parsley
  • 3 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp (30 mL) Worcestershire sauce
  • ½ tsp (2 mL) EACH paprika, salt and pepper
  • 1 egg
  • 1 lb (500 g) Medium Ground Beef
  • ¼ cup (60 mL) dry bread crumbs
  • 12 bamboo skewers, soaked for 30 minutes
  • 6 pitas (with pockets)
  • Steak sauce
  • Golden Grilled Vegetables
  • 3 medium onions, thinly sliced
  • 1 sweet red or green pepper, seeded and thinly sliced
  • 2 tbsp (30 mL) extra virgin olive oil
  • ¼ cup (60 mL) steak sauce (approx)
  • ½ tsp (2 mL) EACH salt and pepper

Method

Follow these cooking methods/directions:

  1. Combine parsley, green onions, garlic, Worcestershire sauce, paprika, salt and pepper with a fork. Beat in egg and 2 tbsp (30 mL) water. Mix in ground beef and bread crumbs. Scoop a heaping 2 tablespoonsful (30 mL) and squeeze into a small sausage shape on skewer. Repeat to make 12 skewers. Set aside.

  2. Golden Grilled Vegetables: Scatter onions and red pepper in centre of large square of double-thickness heavy-duty foil. Drizzle with oil, ¼ cup (60 mL) steak sauce, salt and pepper; toss to coat. Cover with another square of double-thickness foil; seal edges tightly.

  3. Grill vegetable packet over medium heat in a closed barbecue for about 20 minutes, turning occasionally, until vegetables are tender. Meanwhile, place skewers on greased grill over medium heat; close lid and grill for about 12 minutes, turning once until digital instant-read thermometer inserted sideways into centre of each reads 160°F (71°C).

  4. Remove meat and vegetables from grill. Slit top of foil packet and fold back. Set aside. Grill pitas, turning once, for about 2 minutes or until warmed.

  5. Toss vegetables with additional steak sauce, if desired. Cut each pita in half and open to form pockets. Remove meat from skewers and serve with Golden Grilled Vegetables tucked into pita pockets. Drizzle meat with steak sauce.
