Grilled Steak with Peppercorn Sauce

  • 2 tbsp (30 mL) butter
  • ¼ cup (60 mL) finely chopped onion
  • 1 tbsp (15 mL) all-purpose flour
  • 2 cups (500 mL) beef broth
  • 2 tsp (10 mL) Worcestershire sauce
  • 1 tsp (5 mL) balsamic vinegar
  • ½ tsp (2 mL) coarsely cracked peppercorns, or to taste
  • Salt
  • 1½ lb (750 g) Beef Rib Eye Grilling Steaks, 1 inch (2.5 cm) thick (about 2)
  • 1 tsp (5 mL) steak seasoning, or to taste

Method

Follow these cooking methods/directions:

  1. Melt butter over medium heat in a skillet. Add onion, reduce heat to medium-low and cook, stirring frequently, for about 10 minutes or until onion is light brown. Add flour and cook, stirring, for 1 minute. Stir in broth, Worcestershire, vinegar and peppercorns and bring to a boil. Reduce heat and boil gently, stirring occasionally, for about 10 minutes or until sauce is thickened and reduced to about 1 cup (250 mL). Season with additional pepper and salt to taste. Cover and keep warm.

  2. Meanwhile, pat steaks dry with paper towel. Rub steaks all over with seasoning to your taste. Grill or broil over medium-high heat for 10 to 12 minutes for 1 inch (2.5 cm) thick steaks, turning twice or more, for medium-rare 145°F (63°C) at the least.

  3. Transfer steaks to cutting board and let rest for 5 minutes. Slice across the grain and serve with sauce.

Seasoning prior to grilling enhances the flavour of steaks better than if you season the steaks after grilling.
