Grilled Souvlaki-Style Beef Skewers

The beef in this recipe gets served off the skewer into a warm pita but would also be great served over rice or with roasted potatoes. To prevent beef cubes from spinning on the stick during cooking, thread beef cubes fairly tightly together on the skewer (without squishing) as the beef cubes will shrink in size as they cook.

  • ¼ cup (60 mL) olive oil
  • 2 tbsp (30 mL) fresh lemon juice
  • 1 tbsp (15 mL) red wine vinegar
  • 3 cloves garlic, minced
  • 1 tsp (5 mL) EACH dried oregano leaves and salt
  • ½ tsp (2 mL) fresh ground pepper
  • 1 lb (500 g) Beef Sirloin Tip Marinating Steak, 1 inch (2.5 cm) thick
  • 4 long bamboo skewers
  • 4 large pitas
  • 2 cups (500 mL) shredded romaine lettuce
  • 1 cup (250 mL) finely chopped tomato
  • ¼ cup (60 mL) finely chopped onion
  • ½ cup (125 mL) prepared tzatziki

Method

Follow these cooking methods/directions:

  1. Combine olive oil, lemon juice, vinegar, garlic, oregano, salt and pepper in a large sealable freezer bag. Pierce steak all over with fork, cut into 1- inch (2.5 cm) cubes and add to bag, massaging marinade into meat; seal and refrigerate for 4 hours. Meanwhile, soak skewers in water for at least 30 minutes.

  2. Discard marinade from meat. Pat beef cubes dry with paper towel. Thread beef cubes evenly onto skewers.

  3. Grill skewers in a closed preheated barbecue over medium-high heat (400°F/200°C) for 8 to 10 minutes, turning to brown on all sides, until cooked to 145°F (63°C) for medium-rare doneness at the least (or 160°F/71°C for medium, or 170°F/77°C for well-done). Lightly grill pitas during the last 1 to 2 minutes of cooking, or until just warmed.

  4. Remove beef from skewers. Place pitas on serving plates. Arrange lettuce, beef, tomato, onions and tzatziki evenly over warm pitas; serve immediately.
