Grilled 30-Minute Kiwi and Cola-Marinated Steak

Kiwi and cola combine to make a powerful marinade that works to tenderize value-priced steak in record time. Be careful to not marinate longer than 30 minutes as there is a risk of over-tenderizing the meat.

  • 1 kiwi, peeled
  • 1 cup (250 mL) cola beverage or cranberry juice
  • 1½ tsp (7 mL) lemon pepper or steak spice

Method

Follow these cooking methods/directions:

  1. Place kiwi in sealable freezer bag; seal bag and mash kiwi to a pulp. Add cola to the bag; seal bag and massage to combine. Pierce steak all over with fork and add to bag, massaging with marinade. Seal and refrigerate for 30 minutes (no longer or the meat will go mushy).

  2. Discard marinade from meat; pat steak dry with paper towel. Season all over with lemon pepper. Grill in a closed preheated barbecue, or pan-fry or broil using medium-high heat for 6 to 8 minutes for ¾ inch (2 cm) thick steaks, turning twice or more, or until a digital instant-read thermometer inserted sideways into centre of steak reads for medium-rare 145°F (63°C) at the least.

  3. Transfer to a cutting board and let rest for 5 minutes. Slice steak across the grain to serve.
