Inspired by popular Tex-Mex flavours, a juicy and tender beef patty is topped with housemade pico de gallo, creamy guacamole and crunchy tortilla strips. Offer to make the burger as mild or as spicy as customers would like by adding pickled jalapeños, hot sauce or even fresh chilies. Create a grande fiesta burger by layering two thinner patties with the assorted toppings and adding Mexican black beans or refried beans.

Here are the following ingredients:
Pico de Gallo
- 8 oz (250 g) seeded and diced tomato, about 1½ cups (375 mL)
- 2 oz (60 g) finely chopped onion, about ½ cup (125 mL)
- 1½ oz (45 g) seeded and diced serrano or jalapeño, about ½ cup (125 mL)
- ¼ cup (60 mL) chopped fresh cilantro
- 2 tbsp (30 mL) lime juice
- 1 tsp (5 mL) kosher salt
Service
- 16 Ground Beef Patties, about 5 oz (150 g) each
- 16 slices pepper jack cheese, about 1 lb (500 g)
- 16 green leaf lettuce leaves
- 64 pickled jalapeño slices (optional)
- 16 brioche burger buns, split and lightly toasted
- 1 lb (500 g) guacamole, about 2 cups (500 mL)
- 2 oz (60 g) crispy tortilla strips, 2 cups (500 mL)
Preparation
- Pico de Gallo: Mix tomatoes with onion, serrano, cilantro, lime juice and salt. Cover and refrigerate.
Service
- Grill or sear burger on flat top, turning as needed, until a digital instant-read thermometer inserted sideways into centre of patty reads at least 160°F (71°C). Top with 1 slice of pepper jack cheese; cook until melted.
- Arrange a lettuce leaf and 4 jalapeño slices (if using) on bottom bun. Top with cooked burger, 2 tbsp (30 mL) EACH guacamole, Pico de Gallo and crispy tortilla strips. Cap with top bun.
Chef's Tip
Housemade burgers can be made using medium ground beef, source ground chuck or round. Serve burger and toppings over lettuce or rice to create a bowl-style entrée.
Alternatively, use prepared Pico de Gallo.
Serve burger with side of fries or tortilla chips and drink as a combo. For an upgraded burger option, increase portion size to 8 oz (250 g) beef patty.
