Loaded beef bowls are an approachable, customizable and versatile menu item, and a great way to highlight a signature protein. Using Ground Beef here means it cooks quickly, and reheats perfectly. The toppings are easily adaptable for seasonal ingredients and emerging flavour trends. The beef can also be used in a burrito, taco or on nacho platters.
Ingredients
Here are the following ingredients:
- ¼ cup (60 mL) canola oil
- 4 lb (2 kg) Ground Beef (Medium)
- 1 tbsp (15 mL) kosher salt
- 2 tsp (10 mL) freshly ground black pepper
- 2 cups (500 mL) chipotle barbecue sauce
Service
- 12 cups (3 L) cooked rice, warmed
- 4 cups (1 L) drained and rinsed canned black beans
- 4 cups (1 L) cooked corn kernels
- 2 cups (500 mL) salsa
- 1 lb (500 g) guacamole, about 2 cups (500 mL)
- 8 oz (250 g) shredded Mexican cheese blend or Cheddar cheese, about 2 cups (500 mL)
- 1 lb (500 g) tortilla chips, about 16 cups (4 L)
- 1 cup (250 mL) chopped fresh cilantro or green onion
Preparation
- Heat oil in large skillet set over medium-high heat. Cook ground beef until browned. Drain off fat. Season with salt and pepper.
- Add barbecue sauce; cook until heated through and slightly reduced. Cool, cover and refrigerate.
Service
- Warm 4 oz (125 g) beef mixture in skillet until heated through. Add a splash of water to loosen, if needed.
- Spoon ¾ cup (175 mL) warm rice in a wide, shallow bowl. Top with ¼ cup (60 mL) EACH black beans and corn and 2 tbsp (30 mL) EACH salsa, guacamole and cheese.
- Spoon warmed beef over toppings. Nestle 1 cup (250 mL) tortilla chips on one side of dish. Garnish with 1 tbsp (15 mL) cilantro or green onion.
Chef's Tip
Substitute ground beef with shredded beef, such as Barbacoa Beef. Serve with plain, Mexican-style or cilantro-lime scented rice. Make this a salad by replacing the cooked rice with shredded lettuce.
