Already a fan favourite, classic meatloaf is transformed into a standout menu option with this Italian-inspired makeover. Juicy Ground Beef is accented with Italian seasoning, breaded and fried until crisp, then topped with warm marinara sauce and fresh mozzarella. Serve with a fresh side salad and grilled focaccia or Italian bread for dipping.
Ingredients
Here are the following ingredients:
- 4 lb (2 kg) Ground Beef (Medium)
- 3 tbsp (45 mL) Italian seasoning blend, divided
- 1 tbsp (15 mL) garlic powder
- 1 tbsp (15 mL) onion powder
- 4 tsp (20 mL) kosher salt
- 2 tsp (10 mL) freshly ground black pepper
- 16 large eggs, divided
- 3 cups (750 mL) Italian seasoned bread crumbs, divided
- 7 oz (200 g) grated Parmesan cheese, about 2 cups (500 mL)
- 1 cup (250 mL) Panko bread crumbs
- 4 cups (1 L) flour, all-purpose
Service
- 4 cups (1 L) marinara sauce, warmed
- 1 lb (500 g) fresh mozzarella, sliced
- 1 cup (250 mL) torn basil leaves
Preparation
- Season beef with 2 tbsp (30 mL) Italian seasoning, garlic powder, onion powder, salt and pepper. Mix in 8 eggs, 2 cups (500 mL) Italian bread crumbs and 1 cup (250 mL) Parmesan cheese.
- Divide mixture between 2 greased 9 x 5-inch (23 cm x 12 cm) loaf pans.
- Bake, in conventional oven at 350°F (180°C), for 1 hour or until a digital instant-read thermometer inserted sideways into center of meatloaf reads at least 160°F (71°C).
- Cool completely. Cut each meatloaf into 8 1-inch (2.5 cm) slices.
- Mix remaining Italian bread crumbs with remaining Italian seasoning, remaining Parmesan cheese and Panko. Whisk remaining eggs with ¼ cup (60 mL) water.
- Dredge meatloaf slices in flour, then dip in egg mixture and coat evenly in bread crumb mixture.
- Arrange in a single layer on sheet pans. Cover and refrigerate.
Service
- Deep-fry one breaded meatloaf slice for 2 minutes at 350°F (180°C) until golden brown and crispy. Drain on paper towel-lined pan.
- Meanwhile, spread 3 tbsp (45 mL) marinara sauce on bottom of oven-proof dish; add deep-fried meatloaf slice.
- Top with 1 tbsp (15 mL) marinara sauce and 1 oz (30 g) sliced mozzarella. Bake or broil until cheese is golden and melted. Garnish with 1 tbsp (15 mL) basil.
Chef's Tip
To easily remove cooked meatloaf, line loaf pans with parchment paper that overhangs the edges, to use as handles for lifting.
Marinara can be housemade or brought in from a supplier.
Ground beef mixture can also be formed into meatballs to serve with cooked pasta or in a sub.
