Baked Souvlaki-Style Beef Meatballs with Vegetable Sauté

Studded with crumbled feta, these meatballs are extra tasty! Serve with the Greek-inspired stir-fry and a drizzle of your favourite creamy Greek salad dressing.

  • 1 egg
  • 1 small onion, finely chopped
  • 1 tsp (5 mL) dried oregano leaves
  • ¼ tsp (1 mL) EACH salt and pepper
  • ¼ cup (60 mL) fresh or dried bread crumbs
  • ¼ cup (60 mL) crumbled feta cheese (optional)
  • 1 lb (500 g) Regular Ground Beef

Vegetable Sauté

  • 1 tbsp (15 mL) vegetable oil
  • 2 onions, cut into lengthwise wedges
  • 2 sweet yellow peppers, seeded and thinly sliced
  • ¼ tsp (1 mL) EACH dried oregano leaves, salt and pepper

Method

Follow these cooking methods/directions:

  1. Beat egg, onion, oregano, salt and pepper with a fork in a large bowl; blend in bread crumbs and feta cheese (if using). Gently mix in ground beef (don’t over-mix). Scoop about 1 heaping tablespoonfuls (15 mL) and shape into meatballs.

  2. Place on rack on a foil-lined rimmed baking sheet and bake in preheated 375°F oven for about 15 minutes or until digital instant-read thermometer inserted into several meatballs reads 160°F (71°C).

  3. Greek Vegetable Sauté: Meanwhile, heat oil over medium-high heat in a large skillet. Add onions, yellow peppers, oregano, salt and pepper; cook, stirring, for about 8 minutes or until vegetables are softened and slightly golden.

  4. Serve meatballs with Greek Vegetable Sauté.
