Baked Ground Beef Quesadillas

These mildly-spiced, nutrient-packed quesadillas are more of a meal than the traditional cheese variety. These quesadillas can be browned on a medium grill or in an ungreased skillet on the stove top, turning once, instead of baking them in the oven.

  • 4 tsp (20 mL) chili powder
  • ⅔ cup (150 mL) EACH shredded Cheddar cheese and refried beans
  • ½ cup (125 mL) salsa

Method

Follow these cooking methods/directions:

  1. Pan-fry ground beef with chili powder over medium-high heat in a nonstick skillet, for 6 to 8 minutes, breaking up meat with back of spoon until completely cooked. Remove from heat; drain.

  2. Stir cheese, refried beans, salsa and green onions into beef. Spread about ½ cup (125 mL) over 1 tortilla; top with a second tortilla. Repeat with remaining tortillas and filling.

  3. Place 3 quesadillas on each of 2 rimmed baking sheets in a single layer. Bake in preheated 450°F oven for 8 to 10 minutes or until golden and cheese is melted. Transfer to a cutting board and cut into wedges to serve.
