2 c. à soupe (30 ml) de beurre, divisées 1 grosse échalote française, hachée finement 1 c. à soupe (15 ml) de farine tout usage 1½ tasse (375 ml) de bouillon de bœuf ½ tasse (125 ml) de bourbon 1 c. à soupe (15 ml) de grains de poivre vert en saumure, rincés et égouttés Sel, poivre grossièrement moulu 1 ½ lb (750 g) de bifteck de macreuse à griller de 1 po (2,5 cm) d’épaisseur 1 c. à thé (5 ml) d'assaisonnement à bifteck (ou au goût)

1. Faire fondre 1 c. à table (15 ml) de beurre à feu moyen-doux dans un grand poêlon. Ajouter l'échalote et faire dorer, en remuant fréquemment, pendant environ 10 minutes. Ajouter la farine et cuire, en remuant, pendant 1 minute. Incorporer le bouillon, le bourbon et les grains de poivre vert, puis porter à ébullition. Réduire le feu et laisser bouillir doucement, en remuant de temps à autre, pendant environ 10 minutes, ou jusqu'à ce que la sauce ait épaissi et soit réduite à environ 1 tasse (250 ml). Saler et poivrer au goût. Retirer du feu et garder au chaud. 2. Assaisonner le bifteck au goût en le frottant des deux côtés. Faire fondre 1 c. à soupe (15 ml) de beurre à feu moyen-vif dans une poêle en fonte ou à fond épais. Poêler le bifteck, en le retournant au moins deux fois avec des pinces. Compter de 10 à 12 minutes de cuisson pour un bifteck de 1 po (2,5 cm) d'épaisseur, jusqu'à ce qu'un thermomètre numérique à lecture rapide inséré latéralement et jusqu'au centre indique 145 °F (63 °C) pour une cuisson au moins mi-saignante. Mettre le bifteck sur une planche à découper et laisser reposer pendant 5 minutes. 3. Trancher le bifteck contre le grain et servir avec la sauce au bourbon et au poivre vert.

Tip

Pour mieux juger du degré de cuisson d'un bifteck, insérez un thermomètre numérique à lecture rapide latéralement jusqu'au centre de la viande.
